High histamine foods are those that naturally contain histamine or can trigger the release of histamine in the body. For individuals who are sensitive to histamine or have conditions like histamine intolerance, consuming these foods can lead to symptoms such as headaches, flushing, hives, digestive issues, or nasal congestion. 

It\’s important to note that the histamine content in foods can vary depending on factors like freshness, processing, and storage conditions. 

Leftover food is ideally frozen, not refrigerated, to help decrease histamine.

High histamine foods:

  • Fermented foods: Sauerkraut, kimchi, kombucha, kefir, yogurt, and some aged cheeses (e.g., blue cheese, Parmesan, Gouda)

  • Fermented other: tempeh, sourdough

  • Aged and cured meats: Salami, pepperoni, bacon, hot dogs, and other processed or cured meats

  • Fish and seafood: Tuna, mackerel, sardines, anchovies, shellfish (shrimp, lobster, crab), and fish sauce

  • Beverages: Wine (especially red wine), beer, champagne, kombucha, kefir

  • Fruits: Strawberries, citrus fruits: lemons, oranges, grapefruits, pineapple, banana, avocado

  • Vegetables: Tomatoes, spinach, eggplant, any pickled veggie

  • Nuts and seeds: Walnuts, cashews, peanuts, and sesame seeds

  • Condiments and sauces: Soy sauce, fish sauce, pickles, vinegar, ketchup, mayonnaise, and mustard.

  • Chocolate and cocoa products
